Why don’t I make ground lamb more often? These bowls reminded me why I should reconsider. Typically, I would use ground lamb to make burgers, but it this was an easy, no-mess way to work with it.

While rice did its thing in the rice cooker, I browned ground lamb with souvlaki seasoning (that I got at Kalustyan’s). In the microwave went a veggie mix from Trader Joe’s and tzatziki (homemade and storebought dressing versions – pick your poison), crumbled feta, crushed pita chips, and hummus rounded out the fixins.

This came together so quickly and was a great way to change up our standard bowl flavors. And the crunch from the crushed pita chips was an inspired addition, if I do say so myself.
